The 4 Most Popular Coffee Brewing Methods

The 4 Most Popular Coffee Brewing Methods
by Craig Barista

Coffee Brewing Methods range from popular Espresso or French Press methods to lesser used methods like Turkish. Here we explore the four most popular Coffee Brewing Methods.

Let's start with the Drip Filtration style.

Drip Filtration is probably the most popular method of all. The Drip Filtration machine works by spraying hot water across ground coffee that is held in a conical shaped filter. The hot water then slowly moves through the ground coffee. Once the water reaches the bottom of the conical filter, it drips into a container beneath it.

The most widely used conical filters are made of paper, while expensive stainless steel or gold conical filters are also available. Yes I did say gold. When buying paper filters, be sure to use oxygen bleached paper. Chemically treated papers may affect the taste of your coffee. Another point to be aware of with paper filters is that you may also have some of the flavorful coffee oils trapped by the paper filter. It is the oils that produce the rich crema when you make an espresso.

The grind is also important with Drip Filtration. If the grind is too fine, you may clog the pores of your filter. You can avoid this by using a course grind (read about grinding here).

Finally, if you do not expect to drink the full pot of coffee, either by yourself (all that caffeine....) or with friends, beware the constantly heated coffee. It loses its flavor and may even become bitter. And the golden rule....never reheat coffee.

One of the simplest of all Coffee Brewing Methods is the French Press or Plunger. This is probably the easiest way to make great coffee!

The French Press works by directly mixing ground coffee with near boiling water. The coffee flavors get drawn out into the water and then the press or plunger is depressed, separating the exhausted coffee grind from the brew. While the process has a similar taste to the Drip Filtration style, the French Press can extract more flavor from the coffee grind by extending the brewing time. But be careful. Manual infusion requires you to get your timing right. If you let the brewing process run too long you may end up with a bitter coffee. Conversely, if you brew too quickly you will have a weak tasting coffee.

One more point, use a course grind. You don't want fine ground coffee escaping through the metal filter and into the brew. A dusty cup of coffee is not an experience worth having.

Probably the most popular of the Coffee Brewing Methods in recent times is making an Espresso using a machine.

So how does an Espresso machine make a great cup of coffee? Super hot, pressurized water is forced through fine ground, tightly packed coffee. The pressurized infusion process ensures that the water stays in contact with the coffee grounds long enough to draw out much of the coffee ground flavor. The water then finds a path through the coffee grounds. And the coffee commences to pour into your cup. When the water finds a path through the coffee grind it is referred to as the 'shot being pulled' through the group.

The sign of a good espresso, using fresh coffee beans, is the richness of the crema. Crema is the hazelnut foam that sits on the surface of the coffee. This is produced by the pressurizing process and the oils of the coffee bean. Oils break down with time, and so a rich crema will be produced using fresh beans.

And if you didn't catch it when I started talking about Espresso, use a fine grind. Using a course grind allows the water to 'brush past' the grind rather than infuse with it. Using a course grind will still produce a good coffee, but it will taste more like a coffee produced using a Drip Filter coffee brewing method rather than true Espresso coffee.

The most Italian of all the Coffee Brewing Methods would have to be making Espresso coffee using a Moka Pot.

The Moka Pot style is also known as a Stovetop coffee pot. Moka pot's come in several sizes including 2, 4 or 6 cup capacities. The Moka Pot a simple 3 piece pot. The water reservoir is at the base, with a coffee basket in the middle and the brewed coffee ends up in the top.

The coffee brewing method is very simple. The pot is placed on a stove top which heats the water in the lower reservoir. As the water reaches boiling point, the steam rises and the water starts to push upward through the coffee grounds. This continues to travel up the central funnel and seeps into the top chamber where it comes to rest. The process finishes when the coffee stops moving into the top chamber. This should only take a few minutes to brew depending on the cup size of the Moka pot.

The grind should be a fine grind, similar or finer to that used in an Espresso machine. If you want to fill the coffee basket the way traditional Italian drinkers do, then heap the coffee grounds high in the coffee basket and screw the two pieces together. Don't worry about compacting the coffee. When the top half of the pot is screwed on, the grounds will be compacted by the filter screen. You should end up with a dry, compacted puck of coffee grounds at the end of brewing.

So there you have it. The four most popular Coffee Brewing Methods.

Craig.

About Xoops---Pack of Information for the Newbie

About Xoops---Pack of Information for the Newbie
by Fat Jack

When it comes to the creation of a content rich, large, dynamic website, you are invariably faced with several myths---strong enough to make you drop your plan altogether. One such myth is: it requires you to be a smart programmer to upload and run a versatile website like this. WRONG!! Getting and running a dynamic website of your dream become piece of cake without hassle or lot of efforts, when you are armed with a tool like XOOPS.

If you are a web host, Xoops can be a great CMS tool for you to easily create dynamic websites. Xoops acts as an ideal tool for developing dynamic community websites---big or small. If you want to create personal weblog or corporate intranet site, or a content rich informative portal----Xoops can be the ultimate solution for getting them and running.

To install it in your server, simply what you need are: a PHP-capable web server such as Apache and a database preferably MySQL.

To keep with the spirit of the type of your website, you can use the software differently.

As for example, Lite XOOPS can be used to create a small size personal weblog or journal. The news module that comes inbuilt with its core framework is enough for the purpose.

For a medium size website you need to make use of the additional modules such as News, Forum, Download, Web Links etc. These modules will help in building up of a community and facilitate interaction among the members and with the visitors.

A feature rich e-commerce site however requires development of some of the customized modules. You can download them free or buy from the outside developers. In any case, Xoops uniform user management system will help you to seamlessly integrate these modules with the core system.

There are some must-to install modules which you need to use as add-ons for a stronger foundation along with the core framework of Xoops. These are:

Security module (antivirus and firewall), additional editors (word processors), a backup module to protect the data, and a few diagnostic modules for managing the site.

Here is a brief guide of the locations from where you can download these add-ons.

Security (the Protector Module v3.0)

Backup (DB Backup and Restore)

Editors (Frameworks and Xoopseditors v1.10)

Diagnostics (XoopsInfo v2.12)

In addition to the above mentioned modules which are essentially administrative in nature, you need to download more modules to support the features like news, photo galleries, links, forums, wikis, blogs and games.

Here is the last piece of advice relating to the selection of the version. We recommend the latest version which can be found by clicking Download Xoops in the Xoops .org Community menu. The latest version---2.0.16 has been released in March 2007.

E! True ZX Games Story: Lode Runner

E! True ZX Games Story: Lode Runner
by Mikhail Zhilkin

Eighties was the marvelous time of innovative game concepts, and this is what we at ZX Games (http://www.zxgames.com) really love and have passion for. We are not really sure what that time was all about, but somehow a single person could come up with a brilliant idea and turn it into a game selling millions of copies.

Developing a game today is a whole different thing. We really do not welcome the idea of having a huge team of developers and writers and animators and etc to create one complex game that will need some time to grow on you and yet will not be original. Simplicity and minimalism is what distinguishes a good game; ingenious thinking is what marks a bright mind.

Today's featured game is Lode Runner. Released in 1983, it's amazing that the game still sells and people buy it everyday. Can you imagine this? Not a day passes by without having at least one person interested in purchasing Lode Runner...

* Game Inventor: Douglas E. Smith

* Occupation at the time of invention: student, major in Physics

* Location at the time of invention: University of Washington, Seattle

Douglas Smith lived in Renton, Washington before going to Seattle to get into the Computer Science Department at the University. However, as irony would have it, the future inventor of Lode Runner failed twice to qualify for Computer Sciences and had to settle on Physics major. Eventually Douglas dropped out of the University in the wake of Lode Runners success and became a millionaire.

The earliest version of Lode Runner was written in Fortran on the Universitys VAX 1. It was called Kong because of its similarities to Donkey Kong. Since developing video games was not authorized use of the Universitys resources, the game was known as graph until its completion. Running graph on the University machine required the user entering a secret password. This password became common knowledge among students, and soon it was reported that around 80 of the total man-hours to the development of the Fortran version and 0 royalties on gross sales. One of the others offered him $100,000 flat. He made the right choice and picked Broderbund. Later Douglas blamed Sirius for leaking a copy of Miner, which was widely distributed in southern California.

Broderbund gave him the advance with no strings attached other than he could not market it elsewhere. To get the royalties, Douglas would have to complete the game with four major points:

1. Animation

2. Sound Effects

3. New Title Page

4. 150 Levels

With new incentive, Douglas worked around the clock, dropping his classes for the quarter (Spring, 1983). At that time he only had about 30 levels and it is said that he was not creative enough to think of another 120. So he let the neighborhood kids come over and design new levels with Douglas' screen editor. He paid the kids on a per level basis for every one that ended up in the final release.

Broderbund had an ex-Walt Disney animator working in-house. For a cut of the profits, he would design a nice title page. Douglas took him up on his offer.

The game's snakes were tuned into running stick figures, because Douglas could not come up with proper animation and simply borrowed the four-frame running man sequence from Broderbund's Choplifter game (hence, the name Bungelings).

The game was ready by Summer of 1983 under the Lode Runner title.

Douglas offered James Bratsanos a flat payment for his role in the development of the Fortran version. James was surprised to receive anything at all, and accepted.

Douglas' royalties started pouring in. He broke Choplifter's Broderbund record of $77,000 in one month royalties. Rumors go around that Douglas grossed $2 millions in total royalties. Although he had to pay a substantial part of the income as taxes to the government, with the net profit he was able to buy a Porche 911 Carrera, a Bayliner Speedboat and a house in Issaquah, Washington.

However, soon with the money going out fast, Douglas realized that he did not have enough to retire on. He started his own company called QAD. The name stood for Quick And Dirty. Unfortunately we do not know what the company was about. What we know is that Douglas did not have much luck with it. So, soon he undertook a new venture named Ralph. Ralph was to become a new video game for the Apple II microcomputer. However the project quickly became overdue and eventually failed. Douglas decided to go back doing what he was best at, and that is making new and improved versions of Lode Runner.

If you have any idea where Douglas E. Smith is now and what he is up to these days, please share this information with us at mail@zxgames.com. As a reward, we will give you any of our games free of charge...

..or just play our remake of Lode Runner (http://www.zxgames.com/en/loderunner.shtml), which is as close to the original as possible and needs no emulators to run.

Commodity Boom

Commodity Boom
by Kevin Tatem

"I tell you pal, we are going into a new age"... G Gekko circa 1987

There is no doubt in our minds that the world is in the midst of a resources boom that will last for decades to come.

This boom has taken the world economy and in particular the resources sector by surprise, with commodity producers battling to keep up with soaring demand for raw materials.

We believe there are some simple but fundamentally sound reasons for the sustainability of the current resources bull market. Quite simply, they relate to the laws of supply and demand.

When we cast our eyes across the broad resources market, we see a scarily familiar pattern emerging for nearly all commodities. This involves market conditions of strongly rising demand, combined simultaneously with relatively few new commodity supply sources on the horizon.

We emphasise that this applies across the board, but an examination of several key commodities provide excellent case studies. In our view, the best examples are gold and oil.

To begin with, let us turn our attention to gold.

We believe it is fair to say that resource company management has become a lot more conservative over the last few decades. There are far less risk-takers now, a mindset likely molded by many years of poorly performing commodity prices.

Certainly in the gold sector, the key theme became the acquisition of ounces and production, rather than exploration. It was cheaper to buy ounces in the ground than to go out and find them, particularly when gold was trading at just US$270 per ounce in 2001.

Consequently, the gold industry throughout the 1980s & 1990s became reliant on mergers & acquisitions for growth. This was a low-risk strategy in the short-term and popular with shareholders and management alike.

However, this strategy had unfortunate longer-term consequences and the chickens are now well and truly coming home to roost.

Firstly, the slashing of exploration budgets in favour of acquisitions led to a dramatic drop-off in the rate of new discoveries. Hence, the production line of new mines has been disrupted.

And when China came along and led the surge in commodity demand that we see today, the problems were exacerbated.

The result is that gold production from the traditional 'big three' producers - the USA, South Africa and Australia - is in decline. Essentially, the gold industry is a mature industry in crisis.

Quite simply, there are few major world-class mines on the drawing board for the next decade.

So the resource sector is paying the penalty for decades of underinvestment in exploration spending: what we like to refer to as resource sector 'R & D.'

An examination of the oil sector decade paints a similar picture. Essentially, it was easier and cheaper to acquire barrels than to explore for them.

Again, this seemed like a sensible strategy at the time, particularly when crude prices plunged to US$10 a barrel in 1997 in the wake of the Asian economic crisis.

But the consequences for the oil industry are significantly worse than those presented by the gold sector as oil is the lifeblood of the world economy.

Once again, the chickens are now coming home to roost. The world's major fields are maturing rapidly and there is an increasing reliance on smaller fields to plug the gap.

A decade of under-investment in the exploration for new fields has meant that oil prices have surged more than six-fold during that time.

And because it takes years to find, develop and successfully produce from a world-class oilfield, there are no easy fixes. Sensible investors are aware of this, which is why oil prices are heading towards US$100 a barrel within the next few years.

When one also throws in other factors such as the question marks over Middle East reserves, the fact that OPEC's share of world oil production is set to increase and that production from big fields is declining by 16 on last year.

Looking at the broad sector once again, the simple laws of supply and demand that usually apply in resource markets do not seem relevant at the moment.

The laws typically dictate that when prices rise due to strong demand, new sources of supply are attracted to the market, and hence prices will ease.

Scarily, the scenario that is playing out before us will ultimately see record commodity prices pretty much across the board, but with stagnant or declining production in many instances.

There is a scarcity of new projects in the wings, but even some of those projects ready for development are being shelved due to high development costs.

So even in an environment of record prices it is difficult to bring new projects onto the market. What hope is there if prices soften?

And is the Chinese juggernaut likely to stop any time soon? The answer is no.

The world is experiencing a once-in-a-century boom via China. The country is undergoing unparalleled industrialisation, with an enormous rural migration to cities. In turn, this is providing the low-cost labour that is driving China's industrial development.

China has experienced ten-fold growth since the 1970s and over the past decade has averaged 9 over the past four years, the fastest pace since it gained independence and second only to China. It is forecast to average growth of 8 to 13 to 22, energy stocks are up 118, and key commodities copper and oil are up five-fold and three-fold respectively.

So far this year there have been some key commodities that have outperformed and are very much in favour with investors and speculators alike. These include uranium, nickel, copper, platinum, iron ore and silver.

By comparison, commodities like gold, oil, coal and zinc have relatively underperformed. With our unrelenting focus on finding value, particularly amongst those commodities that are somewhat out of favour with mainstream investors, we believe there are some bargains to be found.

As a result, we believe commodities such as gold, oil, coal and zinc will play catch up and we favour investment in companies exposed to these commodities. We firmly believe in not following the herd!

Southern Cooking - Spice Up Your Southern Dishes

Southern Cooking - Spice Up Your Southern Dishes
by Ken Miller

Southern Cooking - Add Some Spice With This New Recipe

Being born and raised in the deep South, I do not know where my recently developed taste for spicy food came from. I do not remember much spicy food being served at the dinner table when I was growing up. Although life has taken me far from the South, my love for the Southern cuisine has never diminished. And, this new love for adding spicy to my Southern dishes has me a little pleasantly surprised.

I was unaware that my taste for spicy food or additives had blended into my daily diet of Southern dishes. But, recently I recognized that I was on to something. Maybe, the rest of the world has been eating like this forever, but it was new to me. And, as I searched the internet to see if anyone was suggesting adding spicy flavor to Southern recipes, I could not find any.

You may argue that cajun food has always been spicy. Some may consider that Southern food, since it originated in Louisiana. And, yes, I agree cajun food is spicy. However, to me Cajun food is a breed of it's own. It's not what I would call traditional Southern food.

I'm talking about green beans, fried okra, black eyed peas, cornbread and turnip greens. And, Southern fried chicken, hushpuppies and home made biscuits and gravy.

So, when I realized I was enjoying spicy additives with my favorite traditional Southern dishes , I had to step back and ask myself, where did this come from?

I have found that adding a small slice of jalapeno pepper to turnip greens and a touch of crushed red pepper to fried okra really enhances the flavor. And, a splash of hot sauce on everything Southern is delightful. Try dipping your chicken in a mild hot sauce before coating with flour for a great Southern fried chicken. Of course, some may call this simply hot wings...but not the way I cook it. Hot wings are not cooked Southern style like I cook my fried chicken (free recipe on my website).

I have tried many of the store brand hot sauces, and they are pretty good, but most are too hot or too mild and lacking in flavor. And, I was satisfied until I recently ran across a home made hot sauce recipe that blows all the others out of the water. It is fantastic!

It's called Butt-Kicking Spicy Lime Sauce (my name for it). And, I want to share the recipe with you. Here's how to make your own.

Ingredients:

6 large jalapeno peppers (fresh is better, but you can use bottled)

6 garlic cloves

1 small onion

2 cups apple cider vinegar

1/4 cup chopped cilantro

2 teaspoons salt

juice of 2 limes

1 teaspoon black pepper

Remove the seeds and ribs from the peppers and cut into medium chunks. Roughly chop the onion and garlic and put all the chopped ingredients into a small saucepan. Pour in the vinegar and bring to a boil. Reduce heat and simmer 10 minutes.

Roughly chop the cilantro and put into a blender with the salt, pepper and lime juice.

When the jalapeno mixture is cooked, allow to cool 10 minutes, then add to the blender.

Turn the blender on low for 10 seconds, then increase to highest setting and puree for 3 minutes.

If you want a pure liquid sauce, strain through a medium hole strainer, however, I prefer not to strain. I like the fine pulp in the sauce.

Pour into sterilized jars and refrigerate. The sauce will keep about a month under refrigeration. Makes about a pint.

Note: Sterilize jars by placing jars and lids in boiling water for 15 minutes.

This sauce is very unique tasting due to the cilantro and lime juice. I doubt you will find anything like it in your market. And, this is better because it's fresh. And, you made it yourself.

I put a bottle of this sauce on the table for every meal, including breakfast (it's great on an omelette). Actually, it's good on everything. I haven't tried ice cream yet, but ...hummmm.

What Is Imperial Formosa Oolong Tea?

What Is Imperial Formosa Oolong Tea?
by Jon Stout

Oolong teas are rapidly gaining popularity in the Western world. And, among oolong teas, those created in Taiwan, referred to as Formosa oolong teas, are some of the most delicious. If you havent tried Formosa oolong tea, youre in for a real treat.

Oolong teas originated in China. Oolong literally means black dragon. However, the tea is often referred to as Wulong tea, a name that originated with the person believed to have created this tea.

Wu Liang was a Chinese tea gardener, who, according to Chinese legend, was busy collecting and processing tea leaves when he spotted a river deer. He stopped to kill and prepare the deer and it interrupted his tea processing for the day, and he forgot to dry out the leaves.

He remembered the tea a day later. By this time it had begun to change color, and Wu Liang was afraid it had gone bad, but decided to finish drying it anyway. After completing the drying process, he made himself a cup and found that he had created a very flavorful and aromatic tea. This was the birth of oolong tea.

Oolong tea falls somewhere between black and green tea. It is fermented, but for a shorter period of time than black tea. Depending upon the length of fermentation, oolong teas can be closer to green teas in terms of color and flavor, or closer to black teas. In addition, oolong teas are traditionally made from the larger leaves of the tea plant. These are the leaves that grow further down the tea plant rather than the top leaves.

Formosa oolong teas are those produced in Taiwan, rather than in China. Next to China, Taiwan produces the largest quantity of oolong tea in the world. Formosa oolong teas fall into two categories, depending upon how long theyre fermented. True Formosa oolongs, like Chinese oolong teas, are fermented until about 30% of the tea leaves are red, leaving about 70% of the leaves green.

Formosa Pouchong oolong teas are closer to green tea. The leaves are fermented until just about 15% are red, leaving them 85% green.

To make Formosa oolong and pouchong teas, the leaves are plucked early in the day and then withered in the sun. Then the leaves are bruised lightly to cause the fermentation process to begin. Tea artisans will carefully watch the tea during the fermentation process, often shaking or tumbling the leaves regularly, until the leaves have fermented the required length of time and have reached the appropriate proportion of green and red leaves. It is ending the fermentation process at precisely the right time that makes a perfect oolong or pouchong tea.

Next, the leaves are dried, often using charcoal before they are graded according to the quality and sent for packaging.

Imperial Formosa oolong teas are considered the most sophisticated tea flavors in the world. It brews to a golden color and produces a very crisp liquor. Its an incredibly flavorful tea, often with significant notes of orange and nut flavors and sometimes with a very woody and sweet finish that lingers on the tongue.

Imperial Formosa oolong tea is a fairly rare tea. It may be more difficult to find and may be a bit more expensive. However, it is a true connoisseurs tea and will likely be one of the most exceptionally flavored teas youve ever experienced. You may find that each time you taste Imperial Formosa oolong tea you discover a slightly new and different nuance to the flavor.

Oolong teas of all varieties are also very healthy. Tea leaves naturally contain a high level of anti-oxidants. Fermentation changes these anti-oxidants, and the degree of the fermentation affects the amount of anti-oxidant changes. Because oolong teas are only partially fermented they retain a high level of anti-oxidants in their most natural state.

In particular, oolong teas have a very high level of polyphenols, which are some of the most potent anti-oxidants and are particularly effective at preventing heart disease and many forms of cancer. In recent years, scientists have performed a great deal of research on the positive health benefits of drinking tea and feel confident that being a lifelong tea drinker can help you live a longer and healthier life, protecting you from many serious illnesses.

Oolong tea can also be an effective weight loss supplement. The combination of the caffeine and anti-oxidants in oolong tea have been shown to speed up the metabolism and promote the oxidation of fat. And, research has shown that the caffeine in tea doesnt appear to raise heart rate or cause jitters the way many other caffeinated beverages can. So, tea is safely consumed by most people who are normally caffeine sensitive.

Formosa oolong teas are some of the most delicious and satisfying of all teas. For the experienced tea drinker, oolongs can add a new dimension to a favorite beverage. And for the novice tea drinker, oolong provides a sophisticated introduction to the world of tea. Experience Imperial Formosa oolong for yourself. Youre sure to be delighted with this fragrant and flavorful tea.

Is Notebook A Better Choice Than Desktop?

Is Notebook A Better Choice Than Desktop?
by Roberto Sedycias

If internet made the world a global village, then we might as well say that notebooks made it a global colony. With desktops, things were a click away from us; notebook shorted the distance. Now we can carry the global colony on our shoulder. High-end technology at your lap, perhaps, we need nothing to conquer the world of convergence.

The great advantage of notebooks is that it gives us a sense of portability and mobility. Looking critically, portability is the only feature, a notebook has over desktops then why do we choose to go for a notebook? Notebooks can let you carry your work conveniently and you do not have to worry about all the wires, hardware and space required to keep a desktop. Also it's a matter of choice between work and home. You may want to work from home, when your baby or wife is ill. A notebook comes in handy then.

A notebook has a different role to play for different people, but it gives an incredible sense of freedom. Gone are the days when people walked around with pen and paper. All you need to do today to make notes it to buy a notebook. You may want to quickly write a email to a radio station, which is making noise in the name of music. You may want to sit in your neighborhood coffee shop and write a book or letter. But if you want to carry your notebook everywhere you go, you have to consider the weight of the machine too. A notebook weighs between 5 to 10 pounds; an ultralight model is even lighter. Whereas, a desktop computer, with its standalone CPU, monitor, and keyboard, weighs in at about 70 pounds. A notebook takes much lesser space too and is very convenient.

Some of the most famous notebooks are Sony Vaio, Apple MacBook, Dell Latitude, Toshiba, HP. Also there are many affordable versions of notebooks marketed by companies like Fujitsu, Panasonic, IBM, Asus and etc.

Let's look at a scenario where at a school, students are quietly seated at their desks and working on a class assignment with no teachers to guide them. It's real, and is happening in many schools around us. Now, we don't have to mourn looking at our tiny ones carrying pounds of baggage in their backs. Notebook has it all, from their books to assignment copies.

When we look at the productive side of the picture, we would promptly realize that a notebook is always a wise choice for an employer too. It makes his or her employees to achieve more productivity at work. It saves critical office space. At any crucial moment, a notebook can help you to do the work, even when you are not physically present in the office. When the traffic is high, and your boss is waiting for presentation in a conference room, a notebook comes to the rescue. A desktop PC does not give all this freedom for a good worker.

A research says that employees with notebooks work more than those companies with desktop PCs. A notebook enables you to work from anywhere, while traveling, from a beauty parlor, or while waiting for someone at a shopping mall. And the only disadvantage a notebook has is its safety, unless you doubly assure it from theft. It's easy to pick and elope for anyone at a busy commercial place. So, ensure the safety of your costly gadget that makes you feel the world is at your feet and enjoy the power of technology.
